Well its that time again…
A time for coats ,blazers,boots and one my favorites a hot winter soup.As you can from the title today we’re taking a cosy dive into the realm of soups and why they are such a winter favorite!
As winter casts its icy spell(less snowy on my end of the world, its more of a dry and absolutely freezing spell) , there’s nothing quite as comforting as a steaming bowl of soup. So here it is….
A Recipe to Warm Your Soul :
Ingredients:
1 medium-sized butternut squash, peeled and diced
1 onion, finely chopped
2 cloves of garlic, minced
2 carrots, peeled and chopped
4 cups vegetable broth
1 teaspoon ground cumin
½ teaspoon ground nutmeg
Salt and pepper to taste
Olive oil for sautéing
Instructions:
Heat olive oil in a large pot over medium heat. Add the onions and garlic, sauté until fragrant and translucent.
Add the diced butternut squash and carrots to the pot, stirring occasionally for 5 minutes.
Pour in the vegetable broth, cumin, nutmeg, salt, and pepper. Stir well and bring to a boil. Reduce heat, cover, and simmer for 20–25 minutes, or until the vegetables are tender.
Using an immersion blender or a countertop blender, puree the soup until smooth and creamy.
Return the soup to the pot and heat gently.
