Vegan Sushi Rolls with Avocado and Pickled Vegetables

Ingredients:

For the Sushi Rice:

2 cups sushi rice

2 1/2 cups water

1/2 cup rice vinegar

3 tablespoons sugar

1 teaspoon salt

For the Vegan Sushi Filling:

Nori seaweed sheets

1 ripe avocado, sliced

Pickled vegetables (carrots, cucumbers, radishes)

Sesame seeds for garnish

Soy sauce and wasabi for dipping

Instructions:

Prepare the Sushi Rice:

Rinse the sushi rice under cold water until the water runs clear. Drain well.

In a rice cooker or a saucepan, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender.

While the rice is cooking, heat the rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt dissolve. Allow the mixture to cool.

Once the rice is cooked, transfer it to a large bowl. Gradually add the vinegar mixture, gently folding it into the rice. Let the rice cool to room temperature.

Assemble the Vegan Sushi Rolls:

Place a bamboo sushi rolling mat on a flat surface. Put a sheet of nori, shiny side down, on the mat.

Wet your hands to prevent the rice from sticking. Spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top.

Arrange slices of avocado and pickled vegetables along the bottom edge of the rice.

Lift the bottom edge of the bamboo mat with the nori and rice, and start rolling away from you, tucking in the fillings as you go.

Once you reach the top edge, moisten the border with a little water to seal the roll.

Using a sharp knife, wet it to prevent sticking and slice the roll into bite-sized pieces.

Repeat the process with the remaining ingredients.

Sprinkle sesame seeds over the rolls for added texture and garnish.
